2005 Pinot Noir

 

Winemaking notes
The fruit is grown in the southern most areas of the limestone coast, on stony soils to the west of Mount Gambier. Small batch fermentations of only 1 tonne allow careful monitoring of each parcel of fruit and protection of the delicate fruit characters. This allows the maximum fruit character to be retained in the wine. The wine is matured is aged french oak barrels, giving structure to the pallet, without a dominating oak flavour.
